Have you watched the Blue Zones Documentary Series? It is fascinating. I highly suggest. Ever since I watched it, I have tried to incorporate more beans and fish into my diet. IYKYK!
I cook for my family almost every day mainly because I have a very hungry family, but also because I get a lot of creative energy out in the kitchen! Most things that come out of my kitchen are pretty good, some definitely better than others. Every now and then I make something and I'm like WOW I want that again tomorrow. Here is where I will share those recipes.
Salmon, Kale & Quinoa Bowl
Cook quinoa to package instructions. You can use homemade chicken broth or water.
Thinly slice dinosaur kale. The finer the better.
Slide any additional veggies you want to add to the side. Shredded carrots, cooked beets & halved cherry tomatoes are personal favorites, but I always like to use what is fresh & in season.
Prepare a mango salsa: cubed mango, avocado, diced red onion, jalapeno (if you like spice), lime juice, cilantro, olive oil, salt & pepper. I use a good amount of lime (2 limes juiced) and oil, as this will be the "dressing" to the bowl.
Heat up a can of black beans in water and about half of a package of taco seasoning (seasoning optional // use what you have).
Saute the salmon. Generously coat salmon filets with blackened seasoning. Cook in a saute pan in 1 Tablespoon of butter and a bit of extra virgin olive oil. I like to cook the first side longer, flip the fish, cook a few minutes and turn the burner off, cover and let sit to cook through.
Plate your dinner and enjoy! I love to use a pasta bowl. Kale first, quinoa, beans, salmon, veggies & a large portion of mango salsa on the side (including several spoonfuls of the juice). Add any veggies at the end!
